Wells WI June 2019 meeting report.

Our meeting started with notices about opportunities to take part in summer evening walks, a skittles social and walking netball.

Arrangements were finalised for our coach trip to the American Museum in Bath. Our crafters invited members to help make bunting and a table cover to display at events.

We also agreed ways to ensure that photos of members are not taken and shared without their consent.

The main event was a talk and cookery demonstration from Adam Goodfellow, an accomplished Michelin star winning chef who learned his craft in France as well as working for the Roux brothers and in famous UK restaurants like Le Gavroche. He has been running his own restaurant in Wells, Goodfellows, with his wife Martine since 2004.

Adam first showed us how to make a parcel of Chew Valley smoked salmon and Brixham crab, which he served on a Parmesan and poppy seed biscuit and decorated with Keta caviar.

He also told us how to make a smoked salmon mousse filling, using the same technique. These useful starters can be made the day before they are served.

The room then filled with mouth-watering aromas as Adam showed us how to make fillet of sea bass with a basil potato cake, Mediterranean vegetables and sauce vierge.

Among the many useful things we learned while being dazzled by Adam's knife skills were: how to sift through crab for bits of shell using clingfilm; that it is better to slice the side off a lemon to squeeze juice than cut it in half exposing all the pips; how to roll a red pepper to cut the core and seeds out; and to take fish off the heat just before it is done to avoid it becoming dry.

We had time at the end for a few questions and learned some of the secrets of the lemon tart dessert that is the runaway best seller at the restaurant.

Adam make creating this delicious food look easy and presented everything beautifully, so it looked as good as it smelled. He gave us recipe cards to take home, with a discount voucher for Goodfellows.

Another very enjoyable and educational evening!

The next meeting will be on Tuesday 2 July at 7.30pm at the Mendip and Wells Museum, when our speaker will tell us how to protect ourselves from scams and fraud.
